  • 1 cup shredded Monterey Jack cheese
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup refried beans
  • 1/4 cup sliced jalapeños (pickled or fresh)
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup diced red onion
  • 1 avocado (sliced or mashed into guacamole)
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh cilantro
  • Lime wedges for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Line your sheet pan with parchment paper for easy cleanup.
  2. Heat a skillet over medium heat and add 1 tablespoon of oil. Add ground beef and cook until browned, breaking it into crumbles. Add taco seasoning and water, stir, and simmer for 3-5 minutes. Remove from heat.
  3. Spread a layer of tortilla chips evenly across the sheet pan.
  4. Spoon dollops of refried beans on top of the chips. Evenly distribute the cooked ground beef, followed by a generous sprinkling of shredded cheese.
  5. Top with halved cherry tomatoes, sliced jalapeños, diced red onion, and black olives.
  6. Place the sheet pan in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.
  7. Remove the pan from the oven and immediately top the nachos with fresh avocado slices, a drizzle of sour cream, chopped cilantro, and a squeeze of lime.
  8. Serve the nachos straight from the pan with extra salsa, guacamole, and lime wedges on the side.
