Delicate lavender butter cookies with a subtle floral note, perfect for tea parties, gifting, or cozy afternoons.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 tablespoon dried culinary lavender
  • 1/4 teaspoon salt
  • 2 egg yolks

Instructions

  1. Preheat the oven to 350Β°F (175Β°C). Line baking sheets with parchment paper.
  2. Grind the dried lavender slightly using a mortar and pestle or the back of a spoon.
  3. In a large mixing bowl, beat the softened butter and sugar together until light and fluffy (about 2-3 minutes).
  4. Mix in the egg yolks and vanilla extract until well combined.
  5. In a separate bowl, whisk together the flour, ground lavender, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until the dough comes together. Avoid overmixing.
  7. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  8. On a floured surface, roll out the chilled dough to about 1/4-inch thickness. Use cookie cutters to cut out shapes and place them on the prepared baking sheets.
  9. Bake for 10-12 minutes, or until the edges are lightly golden.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Always use culinary-grade lavender for the best flavor. Chill the dough to ensure the cookies hold their shape when baked.
