Juicy Garlic Butter Grilled Shrimp

A quick and easy recipe for tender, juicy shrimp grilled to perfection with a rich garlic butter marinade, perfect for weeknights or special occasions.

  • 1 pound large shrimp, peeled and deveined (tail-on optional)
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, finely chopped
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Rinse shrimp under cold water and pat dry with paper towels.
  2. In a mixing bowl, whisk together melted butter, olive oil, minced garlic, lemon juice, chopped parsley, smoked paprika, salt, black pepper, and red pepper flakes if using.
  3. Add shrimp to the marinade and toss gently to coat. Cover and refrigerate for 15-20 minutes.
  4. Preheat grill or grill pan to medium-high heat (about 375Β°F). Lightly oil the grates or pan.
  5. Thread 4-5 shrimp onto each skewer, leaving space between each shrimp.
  6. Grill shrimp skewers for 2-3 minutes per side until shrimp turn pink and opaque with slight char. Baste with leftover garlic butter if desired.
  7. Remove from grill, garnish with fresh parsley and lemon wedges, and serve immediately.

Notes

Do not marinate shrimp longer than 20 minutes to avoid mushy texture. Use skewers to prevent shrimp from falling through grill grates. Preheat and oil grill grates well to prevent sticking. For dairy-free, substitute butter with coconut oil or vegan butter. If using wooden skewers, soak in water for 30 minutes before grilling.
