  • 1 cup (120g) sliced or chopped crunchy almonds
  • 1 cup (30g) unsweetened coconut flakes
  • 1/4 cup (85g) raw honey or maple syrup
  • 1/4 cup (60ml) olive oil or melted coconut oil
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of sea salt
  • 1/2 cup (75g) dried cranberries
  • 1/2 cup (50g) freeze-dried strawberries
  • Optional: chia seeds or flax seeds

Instructions

  1. Preheat your oven to 325Β°F (160Β°C).
  2. In a large mixing bowl, combine 3 cups (270g) of rolled oats, 1 cup (120g) of sliced almonds, and 1 cup (30g) of unsweetened coconut flakes. Stir to mix evenly.
  3. In a small bowl, whisk together 1/4 cup (85g) of raw honey or maple syrup, 1/4 cup (60ml) of olive oil or melted coconut oil, 1 teaspoon vanilla extract, 1/2 teaspoon ground cinnamon, and a pinch of sea salt.
  4. Pour the wet mixture over the dry ingredients and toss thoroughly to coat every oat and nut.
  5. Line a baking sheet with parchment paper and spread the granola in an even layer without crowding.
  6. Bake for 20-25 minutes, stirring gently halfway through. Watch closely in the last 5 minutes to avoid burning. The granola should be golden brown and smell nutty and sweet.
  7. Remove from oven and immediately stir in 1/2 cup (75g) dried cranberries and 1/2 cup (50g) freeze-dried strawberries.
  8. Let the granola cool completely on the baking sheet to crisp up.
  9. Once cooled, store in an airtight container for up to two weeks.

Notes

To get perfect crunch without burning, bake at a moderate temperature and stir halfway through. Add dried berries after baking to keep them vibrant and chewy. For vegan version, substitute honey with maple syrup or agave nectar. Store in airtight container for up to two weeks or freeze for longer storage.
