  • 1/2 teaspoon baking powder
  • 1 cup toasted pecans, chopped finely

Instructions

  1. Preheat the oven to 350Β°F (175Β°C). Line a baking sheet with parchment paper.
  2. Toast the pecans in a dry skillet over medium heat, stirring occasionally, until fragrant (about 3-4 minutes). Let them cool and chop finely.
  3. In a large mixing bowl, use an electric mixer to beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Mix in the vanilla extract until well incorporated.
  5. In a separate bowl, whisk together the all-purpose flour, salt, and baking powder.
  6. Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined. Avoid overmixing.
  7. Gently fold in the chopped toasted pecans using a spatula.
  8. Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 12-15 minutes, or until the edges are golden brown. The centers may look slightly underdone but will set as they cool.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
