  • 23 thyme sprigs
  • 2 oz (60 ml) pear juice
  • 0.5 oz (15 ml) lemon juice
  • 0.5 oz (15 ml) simple syrup (optional)
  • Champagne or sparkling wine

Instructions

  1. Thinly slice the pear for garnish and muddling. Wash the thyme sprigs and set a few aside for garnish.
  2. In your cocktail shaker, add 2-3 pear slices and 1-2 thyme sprigs. Use a muddler to gently crush them, releasing their flavors.
  3. Pour in 2 oz (60 ml) pear juice, 0.5 oz (15 ml) lemon juice, and 0.5 oz (15 ml) simple syrup (optional). Adjust syrup based on your sweetness preference.
  4. Fill the shaker with ice and shake vigorously for about 15 seconds.
  5. Using a fine mesh strainer, pour the mixture into a champagne flute.
  6. Slowly pour champagne or sparkling wine over the pear mixture until the glass is full.
  7. Add a fresh thyme sprig and a pear slice to garnish. Serve immediately and enjoy!
