  • 2 pork tenderloins, about 11.5 lbs each, trimmed of silver skin
  • 2 tbsp olive oil
  • 23 cloves garlic, minced
  • 2 medium-sized apples, peeled and diced
  • 1 small onion, finely chopped
  • 2 tbsp brown sugar
  • 2 tbsp apple cider vinegar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • Salt and pepper to taste
  • Fresh rosemary, minced
  • Fresh thyme, minced
  • Fresh parsley, minced

Instructions

  1. Preheat the oven to 400Β°F (200Β°C).
  2. In a mixing bowl, combine minced rosemary, thyme, parsley, garlic, olive oil, and a generous pinch of salt and pepper to form a paste.
  3. Rub the pork tenderloins all over with the herb mixture, ensuring an even coat. Let them sit at room temperature for 15 minutes to marinate.
  4. Place the tenderloins on a baking sheet and roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145Β°F (63Β°C).
  5. While the pork is roasting, heat a skillet over medium heat. Add diced apples, onion, brown sugar, apple cider vinegar, cinnamon, and ginger.
  6. Stir the mixture occasionally and let it simmer for 15-20 minutes, or until the apples are soft and the mixture thickens. Adjust seasoning to taste.
  7. Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing.
  8. Slice the pork tenderloin into medallions and serve with a generous spoonful of apple chutney on the side.
