Irresistible Grilled Radicchio Recipe with Balsamic and Gorgonzola

Smoky grilled radicchio paired with tangy balsamic glaze and creamy gorgonzola creates a bold and irresistible vegetable dish perfect for any occasion.

  • 2 small heads of radicchio, cut into quarters
  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1/4 cup gorgonzola cheese, crumbled
  • 1 tablespoon honey (optional)
  • 1/2 teaspoon salt
  • Freshly cracked black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat your grill to medium-high heat (around 400Β°F/200Β°C). If using a grill pan, heat it over medium-high heat until hot.
  2. Rinse and pat dry the radicchio heads. Cut each into quarters, keeping the core intact to hold the leaves together.
  3. In a small bowl, mix the olive oil and balsamic vinegar. Add a pinch of salt and black pepper for seasoning.
  4. Brush the radicchio quarters generously with the olive oil and balsamic mixture. Ensure the leaves are evenly coated.
  5. Place the radicchio quarters on the grill, cut side down. Cook for 3-4 minutes per side until the edges are charred and the leaves are slightly wilted.
  6. While the radicchio is grilling, warm the honey in a microwave for 10 seconds to make it easier to drizzle.
  7. Once the radicchio is cooked, transfer it to a serving platter. Drizzle with the warmed honey for a touch of sweetness.
  8. Sprinkle the crumbled gorgonzola over the radicchio while it’s still warm, letting the cheese melt slightly.
  9. Garnish with freshly chopped parsley for a pop of color and serve immediately.

Notes

If the radicchio tastes too bitter after grilling, add a little more honey or balsamic glaze to balance the flavors. Serve immediately for the best taste and texture.
