  • 2 yellow onions, thinly sliced

Instructions

  1. Activate the yeast: In a small bowl, combine 2 1/4 teaspoons of active dry yeast, 1 teaspoon of sugar, and 1 cup of warm water. Let it sit for about 5-10 minutes until it becomes frothy.
  2. Mix the dough: In a large bowl, whisk together 3 1/2 cups of all-purpose flour and 1 teaspoon of salt. Add the yeast mixture and 2 tablespoons of olive oil. Mix until a shaggy dough forms.
  3. Knead the dough: Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. If the dough feels sticky, add a little more flour as needed, but don’t overdo it.
  4. Let it rise: Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm spot for 1-2 hours or until it doubles in size.
  5. Caramelize the onions: While the dough is rising, heat 2 tablespoons of olive oil in a skillet over medium heat. Add 2 thinly sliced yellow onions and cook slowly, stirring occasionally, until golden and caramelized (about 20-25 minutes). Set aside.
  6. Shape the dough: Once the dough has doubled, punch it down and transfer it to a greased baking sheet. Stretch or roll it out to fit the pan, leaving it about 1/2 inch thick.
  7. Add toppings: Drizzle olive oil over the surface of the dough and gently press dimples into it using your fingers. Spread the caramelized onions evenly and sprinkle with fresh rosemary and sea salt flakes.
  8. Bake: Preheat your oven to 425Β°F. Bake the focaccia for 20-25 minutes or until golden brown and puffed.
