  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 cup fresh or frozen cherries, pitted
  • 1/2 cup port wine
  • 1/4 cup chicken stock
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme (optional)

Instructions

  1. Score the duck skin in a crosshatch pattern, being careful not to cut into the meat.
  2. Generously season both sides of the duck breast with salt and pepper.
  3. Heat a skillet over medium heat and add a small drizzle of olive oil until shimmering.
  4. Place the duck breasts skin-side down in the skillet and cook for 6-8 minutes until the skin is golden and crispy. Flip and cook the other side for 2-3 minutes. Remove from the skillet and let rest.
  5. In a small saucepan, combine cherries, port wine, chicken stock, honey, and balsamic vinegar. Simmer over medium heat and reduce until slightly thickened, about 5 minutes.
  6. Stir in butter and fresh thyme (if using) for a glossy finish. Adjust seasoning with salt and pepper to taste.
  7. Slice the duck breast into thin pieces and drizzle with the cherry-port sauce. Serve immediately.
