  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • Β½ teaspoon black pepper
  • Β½ cup mayonnaise
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425Β°F (220Β°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash the delicata squash thoroughly. Slice off the ends and cut the squash in half lengthwise. Scoop out the seeds and cut the halves into Β½-inch thick slices.
  3. In a large mixing bowl, toss the squash slices with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  4. Spread the squash slices in a single layer on the prepared baking sheet, leaving space between each piece.
  5. Bake for 20-25 minutes, flipping the slices halfway through to ensure even cooking.
  6. While the squash is baking, combine mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl. Whisk until smooth and creamy.
  7. Serve the fries warm with the garlic aioli on the side for dipping.
