Irresistible Crispy Chickpea Nuts

A crunchy, flavorful snack made with roasted chickpeas and a bold curry spice blend. Perfect for snacking, sharing, or adding to salads and soups.

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 tablespoon curry powder
  • Β½ teaspoon ground cumin
  • Β½ teaspoon smoked paprika
  • Β½ teaspoon garlic powder
  • Β½ teaspoon salt, or to taste
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Rinse and drain the chickpeas in a colander, then spread them onto a clean kitchen towel. Pat them dry thoroughly.
  3. Transfer the dried chickpeas to a mixing bowl. Add olive oil, curry powder, ground cumin, smoked paprika, garlic powder, salt, and cayenne pepper if desired. Mix until the chickpeas are evenly coated.
  4. Arrange the seasoned chickpeas in a single layer on the prepared baking sheet, ensuring they are not overlapping.
  5. Roast the chickpeas in the preheated oven for 20 minutes. Remove the tray and shake or stir the chickpeas to ensure even cooking. Place them back in the oven for another 15-20 minutes, checking during the last few minutes to avoid burning.
  6. Once golden and crispy, remove the chickpeas from the oven and let them cool completely on the tray.
