Irresistible Charred Scallion and Herb Oil

A smoky and vibrant herb oil perfect for drizzling over grilled veggies, crusty bread, or pasta. This versatile recipe adds a gourmet touch to any dish.

Ingredients

  • 68 scallions, trimmed
  • 1 cup parsley, cilantro, or a mix (washed and dried)
  • 2 cloves garlic, minced
  • 1/2 cup olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground

Instructions

  1. Preheat your grill or grill pan over medium-high heat. Lightly oil the scallions and place them on the grill. Cook for 2-3 minutes per side until they’re slightly blackened and softened. Remove and set aside to cool.
  2. Wash and dry your fresh herbs thoroughly. Roughly chop them to make blending easier.
  3. In a food processor or blender, combine the charred scallions, herbs, garlic, olive oil, lemon juice, red pepper flakes, salt, and black pepper. Blend until smooth. If the mixture is too thick, add an extra tablespoon of olive oil.
  4. Taste the herb oil and adjust seasoning as needed—add more salt or lemon juice if desired.
  5. Transfer the oil to a small bowl and drizzle over your favorite dishes. Enjoy!

Notes

Let the charred scallions cool slightly before blending to avoid steaming the other ingredients. Adjust the oil consistency by adding more olive oil if needed.
