Irresistible Caprese Skewers Recipe with Perfect Balsamic Glaze

  • 2 tablespoons honey
  • 1 pint cherry tomatoes
  • 8 ounces fresh mozzarella balls (bocconcini or ciliegine)
  • Fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • Salt
  • Black pepper
  • Wooden or metal skewers

Instructions

  1. In a small saucepan, combine 1/2 cup of balsamic vinegar and 2 tablespoons of honey. Bring to a gentle boil over medium heat, then reduce to a simmer. Cook for about 8-10 minutes, stirring occasionally, until the mixture thickens and coats the back of a spoon. Remove from heat and let cool.
  2. Wash and dry the cherry tomatoes. If your mozzarella balls are large, slice them into bite-sized pieces. Rinse the basil leaves and pat them dry with a paper towel.
  3. Take your wooden or metal skewer and start threading the ingredients. Begin with a cherry tomato, followed by a basil leaf, and then a mozzarella ball. Repeat this pattern until the skewer is full, leaving a small space at the top for handling. Aim for 3-4 sets of tomato, basil, and mozzarella per skewer.
  4. Lightly brush or drizzle extra virgin olive oil over the skewers for added richness.
  5. Sprinkle a pinch of salt and freshly cracked black pepper over the skewers.
  6. Once the balsamic glaze has cooled, drizzle it generously over the skewers. You can use a spoon or transfer the glaze to a squeeze bottle for more control.
