  • 1 cup (200g) brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (170g) butterscotch chips
  • 1 cup (150g) toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly grease the edges.
  2. In a large mixing bowl, cream together 1 cup (226g) of unsalted butter, 1 cup (200g) of brown sugar, and 1/2 cup (100g) of granulated sugar using an electric mixer. Mix until light and fluffy, about 2-3 minutes.
  3. Add 2 large eggs (room temperature) one at a time, mixing well after each addition. Stir in 2 teaspoons of vanilla extract.
  4. In a separate bowl, whisk together 2 1/4 cups (280g) of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix—this helps keep the bars tender.
  6. Fold in 1 cup (170g) of butterscotch chips and 1 cup (150g) of toffee bits. Make sure they are evenly distributed for that perfect bite!
  7. Press the dough evenly into the prepared baking pan using a spatula or your fingers.
  8. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  9. Let the cookie bars cool completely on a cooling rack before cutting them into squares.
