Instructions

  1. Preheat oven to 400°F (200°C). Lay 12 slices of thick-cut bacon on a foil-lined baking sheet in a single layer. Bake for 15-20 minutes, flipping halfway, until crispy and golden. Drain on paper towels and let cool completely (about 10 minutes).
  2. In a medium mixing bowl, combine 8 ounces softened cream cheese, 2 cups shredded sharp cheddar, 1 tablespoon ranch seasoning, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, chopped chives, and 1/4 teaspoon black pepper. Mix well until smooth, about 3-5 minutes.
  3. Lay a large piece of plastic wrap on the counter. Transfer the cheese mixture onto the center and form into a tight ball using the plastic wrap. Twist ends to compact. Chill in the refrigerator for at least 1 hour to firm up.
  4. Chop cooled bacon into small pieces (or pulse briefly in a food processor for finer texture). Remove cheese ball from fridge and unwrap carefully.
  5. Place chopped bacon in a shallow bowl or plate. Roll the cheese ball gently in the bacon bits, pressing lightly to adhere and cover the entire surface.
