  • 1.5 pounds fingerling potatoes, washed and dried
  • 2–3 tablespoons olive oil
  • 4–5 cloves garlic, minced or finely grated
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • Β½ teaspoon freshly ground black pepper
  • Parmesan cheese, optional

Instructions

  1. Preheat your oven to 400Β°F (200Β°C) and place a rack in the middle position.
  2. Wash and dry the fingerling potatoes thoroughly. Slice them lengthwise.
  3. In a large mixing bowl, toss the potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until well coated.
  4. Spread the potatoes out in a single layer on a baking sheet, cut side down.
  5. Roast the potatoes in the oven for 20–25 minutes, flipping halfway through using a spatula.
  6. Check for doneness; the potatoes are ready when fork-tender and crispy on the outside. Broil for 2–3 minutes for extra crunch if desired.
  7. Garnish with chopped parsley and sprinkle with Parmesan cheese before serving, if desired.

Notes

Ensure the potatoes are completely dry before seasoning to achieve maximum crispiness. Avoid overcrowding the baking sheet to prevent steaming instead of roasting.
