Fresh Watermelon Salad with Lime and Mint

Ingredients

  • 6 cups cubed seedless watermelon
  • 2 large limes, juiced (about 2 tablespoons fresh lime juice)
  • 1/4 cup fresh mint leaves, chopped or torn
  • 1 tablespoon honey or agave nectar (optional)
  • Pinch of sea salt
  • 1/2 cup diced cucumber (optional)
  • 1/2 cup crumbled feta cheese (optional)
  • Freshly cracked black pepper, a pinch or two (optional)

Instructions

  1. Cut off the rind and slice the watermelon into roughly 1-inch cubes, about 6 cups.
  2. Peel (if preferred) and dice cucumber into small cubes, about 1/2 cup.
  3. Roll the limes on the counter, cut, and squeeze out 2 tablespoons of fresh lime juice, straining out seeds.
  4. Rinse and pat dry the mint leaves, then tear or finely chop about 1/4 cup.
  5. In a large mixing bowl, gently toss the watermelon cubes, cucumber, and mint together.
  6. Drizzle the lime juice evenly over the salad.
  7. Add 1 tablespoon honey or agave nectar if desired, a pinch of sea salt, and freshly cracked black pepper if using. Toss gently to coat without bruising the watermelon.
  8. Sprinkle 1/2 cup crumbled feta cheese on top just before serving, if using.
  9. Chill the salad in the refrigerator for 10-15 minutes to meld flavors, then serve cold.

Notes

Be gentle when tossing to keep watermelon cubes intact. Drain excess watermelon juice if very juicy to avoid watery salad. Add mint and feta just before serving to keep fresh. Lime juice brightens flavor and keeps mint vibrant. Serve within an hour for best texture.
