  • Juice of 1 large lime (about 2 tablespoons)
  • 1 teaspoon honey (optional)
  • 1/4 teaspoon salt
  • Pinch of freshly ground black pepper

Instructions

  1. Rinse 2 cups of fresh strawberries under cold water. Hull and dice them into roughly 1/4-inch pieces. Set aside in a mixing bowl.
  2. Finely chop 1 small jalapeño pepper, removing seeds if less heat is desired. Add to the strawberries.
  3. Finely dice 1/4 cup of red onion and add to the bowl.
  4. Roughly chop 2 tablespoons of fresh cilantro leaves and toss into the mix.
  5. Squeeze the juice of 1 large lime (about 2 tablespoons) over the ingredients. Add 1 teaspoon of honey to balance the tartness and spice.
  6. Sprinkle 1/4 teaspoon salt and a pinch of freshly ground black pepper over the mixture.
  7. Gently toss all ingredients together using a spoon or spatula, being careful not to crush the strawberries.
  8. Let the salsa sit for 5-10 minutes at room temperature to allow flavors to meld.

Use firm, ripe strawberries for best texture. Remove jalapeño seeds for milder heat. Let salsa rest 5-10 minutes to meld flavors. Avoid freezing as it makes the salsa watery. Can substitute honey with maple syrup or agave nectar for vegan version.
