  • 3 cups fresh or frozen peas (about 450 grams)
  • 1/4 cup fresh mint leaves, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • Salt to taste
  • Freshly cracked black pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Rinse fresh peas under cold water and drain well. If using frozen peas, no need to thaw; just measure them out.
  2. Finely chop about 1/4 cup of fresh mint leaves and mince 2 garlic cloves. Squeeze 1 tablespoon of fresh lemon juice and set aside.
  3. Place a medium skillet over medium heat and add 2 tablespoons of extra virgin olive oil. Let it warm for about 1 minute until shimmering but not smoking.
  4. Add minced garlic to the skillet and cook for about 30 seconds to 1 minute, stirring constantly, until fragrant but not browned.
  5. Toss in the peas and stir gently to coat with the garlic and oil. Cook for 3-4 minutes, stirring occasionally, until peas are tender-crisp or heated through.
  6. Sprinkle salt and freshly cracked black pepper to taste. Add the tablespoon of lemon juice and stir well to combine.
  7. Remove the skillet from heat and gently fold in the chopped mint leaves to keep the mint bright and fresh.
  8. Taste and adjust seasoning if needed, adding more salt or lemon juice as preferred.
  9. Serve immediately warm.

Notes

Add the mint off the heat at the very end to keep its flavor fresh and vibrant. Watch garlic closely to avoid burning. Use fresh lemon juice for best flavor. Frozen peas can be used without thawing. Optional red pepper flakes add a spicy kick.
