  • ½ cup (120g) Greek yogurt, plain or vanilla (can substitute with coconut yogurt for dairy-free)
  • ½ cup (75g) fresh or frozen blueberries
  • 1 tablespoon fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 12 tablespoons honey or maple syrup, to taste
  • 1 tablespoon chia seeds (optional)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the dry ingredients: In a mixing bowl or jar, add rolled oats, chia seeds (if using), and a pinch of salt. Stir gently to mix.
  2. Add the wet ingredients: Pour in milk and Greek yogurt. Add honey or maple syrup, vanilla extract, lemon juice, and lemon zest.
  3. Mix thoroughly until oats are evenly coated and lemon zest is distributed.
  4. Fold in blueberries gently, being careful not to crush them.
  5. Seal the container tightly and refrigerate for at least 6 hours or overnight.
  6. Before serving, stir the oats. Add a splash of milk if the texture is too thick.
  7. Garnish with extra blueberries, lemon zest, or a drizzle of honey if desired.

Notes

Use rolled oats for best texture; instant oats become mushy. Fresh lemon zest is essential for bright flavor. Chia seeds are optional but add fiber and texture. Adjust sweetness after chilling if needed. For dairy-free, substitute Greek yogurt with coconut or almond yogurt and use plant-based milk. Store in fridge up to 3 days. Add fresh blueberries just before serving to keep them firm.
