  • 2 medium-sized apples (Honeycrisp or Gala), sliced thinly
  • 56 cups mixed greens (spinach, arugula, or spring mix)
  • Β½ cup dried cranberries
  • Β½ cup walnuts, toasted
  • 4 oz goat cheese, crumbled
  • ΒΌ small red onion, sliced thinly
  • ΒΌ cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • ΒΌ tsp salt
  • ΒΌ tsp black pepper

Instructions

  1. Wash and dry the mixed greens. Slice the apples thinly and toss them with a splash of lemon juice to prevent browning. Thinly slice the red onion.
  2. Heat a small skillet over medium heat. Add the walnuts and toast for 3-4 minutes, stirring frequently, until fragrant.
  3. In a small bowl or jar, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until combined. Taste and adjust seasoning if needed.
  4. In a large bowl, combine the mixed greens, sliced apples, cranberries, red onion, and toasted walnuts.
  5. Gently crumble the goat cheese over the salad.
  6. Drizzle the vinaigrette over the salad and toss gently to coat everything evenly.
  7. Transfer to a serving platter or individual plates for a beautiful presentation. Serve immediately.
