  • 1/4 cup (85g) honey
  • 3/4 cup (180ml) cold buttermilk
  • 1 large egg, lightly beaten
  • Optional: coarse sugar for sprinkling on top

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or fork to cut the butter until the mixture resembles coarse crumbs with pea-sized bits.
  4. In a separate bowl, whisk together the honey, cold buttermilk, and lightly beaten egg until smooth.
  5. Pour the wet mixture into the dry ingredients. Stir gently just until the dough comes together; it will be sticky. Do not overmix.
  6. Lightly flour a clean surface and your hands. Pat the dough into a rectangle about 1 inch (2.5 cm) thick. Fold the dough over onto itself 2-3 times to build layers.
  7. Using a floured 2.5-inch (6 cm) round cutter, stamp out biscuits without twisting. Place biscuits close but not touching on the prepared baking sheet.
  8. Brush tops lightly with buttermilk or melted butter and sprinkle with coarse sugar if desired.
  9. Bake for 12-15 minutes until tops are golden and biscuits have risen.
  10. Transfer to a cooling rack for 5-10 minutes. Serve warm.

Notes

Keep butter cold to ensure flaky texture. Do not overmix dough to avoid tough biscuits. Press cutter straight down without twisting to allow biscuits to rise properly. Chill dough briefly if kitchen is warm. Buttermilk can be substituted with milk plus lemon juice or vinegar.
