  • 2 1/4 teaspoons instant yeast (about one packet)
  • 1 cup whole milk, warmed to 110°F
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted and cooled
  • 1 large egg, at room temperature
  • 1 1/4 teaspoons fine sea salt
  • 2 tablespoons unsalted butter, melted (for topping)
  • Flaky sea salt (for sprinkling)

Instructions

  1. Pour 1 cup whole milk into a small saucepan or microwave-safe bowl. Heat gently until just warm to the touch (about 110°F), not hot.
  2. In a large mixing bowl, whisk together flour, instant yeast, sugar, and fine sea salt.
  3. Make a well in the center. Pour in the warm milk, melted butter, and egg. Stir with a wooden spoon until a shaggy dough forms.
  4. Knead the dough until smooth and elastic—6-8 minutes with a stand mixer on medium-low, or 8-10 minutes by hand on a lightly floured surface.
  5. Place the dough in a lightly greased bowl. Cover with a damp kitchen towel or plastic wrap. Let rise in a warm spot until doubled, about 1 to 1 1/2 hours.
  6. Turn out the risen dough onto a lightly floured surface. Gently pat into a rectangle, about 1/2 inch thick. Cut into 12-16 equal pieces. Pinch each piece into a ball, tucking edges underneath.
  7. Arrange balls in a greased 8×8-inch or 9×13-inch pan, spaced just slightly apart. Cover and let rise until puffy and touching, about 30-45 minutes.
  8. Preheat oven to 350°F. Bake uncovered for 22-26 minutes, until golden brown and tops spring back when lightly pressed.
  9. As soon as rolls come out, brush generously with melted butter and sprinkle with flaky sea salt.
  10. Let rolls cool in the pan for 10 minutes before serving. Enjoy warm.

Notes

For gluten-free rolls, use a 1:1 gluten-free flour blend. For vegan rolls, substitute plant-based milk, vegan butter, and 3 tbsp aquafaba or a flax egg for the egg. Brush rolls twice with butter for extra richness. Sprinkle sea salt while rolls are hot for best adhesion. Rolls can be made ahead and refrigerated overnight after shaping; let rise before baking. Freeze baked rolls for up to 2 months.
