  • 3 1/2 cups (420g) all-purpose flour
  • 1 packet (2 1/4 tsp) instant yeast
  • 1 tsp granulated sugar
  • 1 tsp salt
  • 1 1/2 cups (360ml) warm water
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup (50g) grated Parmesan cheese
  • Flaky sea salt
  • Fresh herbs (optional, such as rosemary or thyme)

Instructions

  1. In a large mixing bowl, combine 3 1/2 cups (420g) all-purpose flour, 1 packet (2 1/4 tsp) instant yeast, 1 tsp granulated sugar, and 1 tsp salt. Gradually add 1 1/2 cups (360ml) of warm water and 2 tbsp olive oil. Stir until a sticky dough forms.
  2. Transfer the dough to a lightly floured surface and knead for about 8 minutes until smooth and elastic. If it’s too sticky, add a little more flour—just a tablespoon at a time.
  3. Place the dough in a greased bowl, cover with a damp towel or plastic wrap, and let it rise in a warm spot for 1 hour or until doubled in size.
  4. While the dough rises, line your baking pan with parchment paper and drizzle a generous amount of olive oil on top.
  5. Once risen, punch down the dough and transfer it to the prepared pan. Use your fingers to stretch and press the dough evenly to fill the pan.
  6. Mince 3 cloves of garlic and mix them with 3 tbsp olive oil. Spread the mixture over the dough. Sprinkle 1/2 cup (50g) grated Parmesan cheese and a pinch of flaky sea salt across the top.
  7. Use your fingertips to press dimples into the dough to help trap the olive oil and create iconic focaccia pockets.
  8. Cover the pan loosely and let the dough rise for another 30 minutes.
  9. Preheat your oven to 400°F (200°C). Bake the focaccia for 20-25 minutes, or until it’s golden brown and cooked through.
  10. Once baked, remove the pan from the oven and let the bread cool for 10 minutes before serving.
