  • Flatbread dough (store-bought or homemade; about 10×14 inches)
  • 2 cups (about 300g) cherry tomatoes, halved
  • 1/4 cup (60ml) extra virgin olive oil, divided
  • 2 garlic cloves, minced
  • 1 cup (about 100g) shredded or sliced mozzarella cheese (optional)
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1/2 cup (about 15g) fresh basil leaves, torn
  • Red pepper flakes (optional, to taste)
  • Balsamic glaze (optional, for drizzling)

Instructions

  1. Preheat your oven to 475Β°F (245Β°C). If using a pizza stone, place it in the oven to heat for about 30 minutes.
  2. In a mixing bowl, toss the halved cherry tomatoes with 2 tablespoons of olive oil, minced garlic, salt, and pepper.
  3. Spread the tomatoes on a baking sheet and roast for 15 minutes until soft and slightly caramelized.
  4. Lightly flour your surface and roll out the flatbread dough into a roughly 10×14 inch rectangle.
  5. Transfer the dough onto a pizza peel or the back of a baking sheet dusted with flour if using a pizza stone, or place on a parchment-lined baking sheet.
  6. Brush the dough lightly with olive oil using a pastry brush.
  7. Evenly sprinkle mozzarella cheese over the dough, if using.
  8. Scatter the roasted cherry tomatoes evenly over the cheese or dough.
  9. Bake the flatbread for 10-12 minutes until the crust is golden and the cheese is bubbly.
  10. Remove from oven and scatter torn fresh basil leaves on top.
  11. Add a pinch of red pepper flakes if desired.
  12. Lightly drizzle balsamic glaze over the flatbread just before serving.

Notes

Roast the cherry tomatoes to concentrate their sweetness and soften them. Use room temperature dough for easier rolling. Avoid overloading toppings to keep the crust crisp. Rotate the baking sheet halfway through baking for even browning. For dairy-free, omit or substitute mozzarella with plant-based cheese. For gluten-free, use gluten-free flatbread dough.
