This turkey fried rice recipe is a quick, satisfying dinner packed with bold flavors and completely customizable. Perfect for busy weeknights or using up holiday leftovers.

  • 2 cups cooked rice (day-old or leftover)
  • 1 cup cooked turkey, shredded or diced
  • 2 tablespoons vegetable oil (canola or sesame oil)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup frozen peas and carrots
  • 3 tablespoons soy sauce (low-sodium preferred)
  • 1 teaspoon sesame oil
  • 2 large eggs, whisked
  • 2 green onions, sliced thin
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  2. Add the minced garlic and grated ginger. SautΓ© for about 30 seconds until fragrant.
  3. Add the cooked turkey to the skillet. Stir-fry for 2-3 minutes to warm through.
  4. Push the turkey to one side of the skillet. Add another tablespoon of oil in the empty space, then pour in the whisked eggs. Scramble the eggs until cooked, breaking them into small pieces with your spatula.
  5. Mix the scrambled eggs with the turkey, then add the cooked rice. Stir well to combine, breaking up any clumps of rice.
  6. Pour in the soy sauce and sesame oil, stirring to evenly coat the rice. Cook for 2-3 minutes.
  7. Add the frozen peas and carrots. Stir well and cook for another 2-3 minutes until the veggies are heated through.
  8. Season with salt and pepper to taste. Adjust soy sauce and sesame oil if needed.
  9. Garnish with sliced green onions before serving warm.

Notes

Use day-old rice for best texture. Customize with your favorite veggies or proteins. Add a splash of water or chicken broth if the rice feels too dry while stir-frying.
