  • 1 tablespoon freshly squeezed lime juice
  • Pinch of sea salt (optional)

Instructions

  1. Prepare the pineapple by peeling, coring, and slicing into 1/2-inch thick rings or wedges.
  2. In a small bowl, combine 1/4 cup granulated sugar with 1 tablespoon ground cinnamon and stir well.
  3. Melt 2 tablespoons unsalted butter and mix with 2 tablespoons dark rum and 1 tablespoon lime juice.
  4. Using a basting brush, coat each pineapple slice with the butter-rum mixture, then sprinkle cinnamon sugar generously on both sides. Let rest for 5 minutes.
  5. Preheat grill or grill pan to medium-high heat.
  6. Place pineapple slices on the grill and cook for 3-4 minutes per side, basting once more with the rum butter mixture halfway through.
  7. Check for tenderness and caramelized crust; cook an extra minute per side if needed but avoid overcooking.
