  • 4 cups (about 300 g) broccoli florets, washed and trimmed
  • 1/4 teaspoon salt (optional)
  • 1/3 cup (80 ml) low-sodium soy sauce
  • 1/4 cup (60 ml) beef broth or water
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon oyster sauce (optional)
  • 2 teaspoons cornstarch mixed with 3 tablespoons cold water
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • Sesame seeds and sliced green onions for garnish (optional)

Instructions

  1. Slice the flank steak thinly against the grain into about 1/4-inch (6 mm) strips. Allow about 10 minutes.
  2. Marinate the sliced beef with 2 teaspoons cornstarch, 1 tablespoon soy sauce, and 1 teaspoon sesame oil. Toss well and set aside for 10-15 minutes.
  3. Wash and cut broccoli into bite-sized florets (about 4 cups). Add a pinch of salt if desired. Set aside.
  4. Mix 1/3 cup low-sodium soy sauce, 1/4 cup beef broth, 2 tablespoons brown sugar, and 1 tablespoon oyster sauce in a bowl. In a separate bowl, mix 2 teaspoons cornstarch with 3 tablespoons cold water until smooth. Set both aside.
  5. Heat 1 tablespoon vegetable oil in a wok or skillet over medium-high heat. Stir-fry broccoli for 3-4 minutes until bright green and just tender but still crisp. Remove and set aside.
  6. Add another tablespoon of oil to the pan. Stir-fry minced garlic and grated ginger for about 30 seconds until fragrant. Add marinated beef in a single layer and stir-fry for 3-4 minutes until browned but still juicy. Avoid overcrowding the pan.
  7. Return broccoli to the pan with the beef. Pour in the soy sauce mixture and stir well. Add the cornstarch slurry and stir until the sauce thickens and coats everything, about 1-2 minutes.
  8. Remove from heat and garnish with sesame seeds and sliced green onions if desired. Serve immediately over steamed rice or noodles.

Notes

Slice beef thinly against the grain for tenderness. Marinate briefly for 10-15 minutes. Cook broccoli separately to keep it crisp. Add cornstarch slurry slowly to thicken sauce without lumps. If sauce thickens too much, add a splash of water or broth to loosen. Avoid overcrowding the pan to keep beef juicy.
