  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 cup (120g) all-purpose flour
  • 1 cup (90g) rolled oats
  • 1/3 cup (70g) packed brown sugar
  • 1/2 cup (115g) cold unsalted butter, cubed
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line your baking dish with parchment paper or lightly grease it.
  2. In a medium bowl, combine mixed berries, granulated sugar, lemon juice, and cornstarch. Gently toss to coat the berries without mashing them.
  3. In a separate bowl, whisk together all-purpose flour, rolled oats, brown sugar, ground cinnamon, and salt.
  4. Add cold, cubed unsalted butter to the dry topping mix. Use a pastry cutter or fingertips to work the butter into the mixture until it resembles coarse crumbs with some pea-sized bits.
  5. Pour the berry mixture evenly into the prepared baking dish. Sprinkle the crumble topping evenly over the berries, covering them completely.
  6. Bake for 35-40 minutes until the topping is golden brown and berry juices bubble around the edges.
  7. Let the crumble rest for about 15 minutes before serving to allow the filling to thicken and flavors to meld.

Notes

Use cold butter for a crispy topping. If topping browns too quickly, tent with foil halfway through baking. Broil for 1-2 minutes at the end for extra crispiness, watching closely to avoid burning. For gluten-free, substitute flour and oats accordingly. For dairy-free, replace butter with solid coconut oil.
