Delicious Caprese Chicken Recipe with Easy Sweet Balsamic Glaze

A quick and easy Caprese Chicken recipe featuring juicy chicken breasts topped with fresh mozzarella, ripe tomatoes, basil, and a sweet balsamic glaze. Perfect for busy weeknights or impressing guests with minimal fuss.

  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each), pounded to even thickness
  • Salt and pepper, to taste
  • 2 tablespoons extra virgin olive oil
  • 8 oz (225 g) fresh mozzarella, sliced (small-ball mozzarella or bocconcini preferred)
  • 2 large ripe tomatoes, sliced thick (heirloom or vine-ripened)
  • About a handful fresh basil leaves, torn or whole
  • 2 cloves garlic, minced
  • 1/3 cup (80 ml) good-quality aged balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • Optional: crushed red pepper flakes for heat

Instructions

  1. Place chicken breasts between two sheets of plastic wrap or parchment and gently pound to about 1/2 inch (1.25 cm) thickness.
  2. Season both sides of the chicken breasts generously with salt and pepper and let rest for about 10 minutes.
  3. In a small saucepan, combine balsamic vinegar and honey or brown sugar. Bring to a gentle boil over medium heat, then reduce to low and simmer, stirring occasionally, until thickened and coats the back of a spoon, about 8-10 minutes. Remove from heat and set aside.
  4. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and cook for 4-5 minutes on the first side until golden brown and releases easily from the pan.
  5. Flip the chicken and immediately top each breast with slices of mozzarella and tomato. Sprinkle minced garlic and fresh basil leaves on top. Cover the skillet with a lid and cook for another 4-5 minutes until chicken reaches 165°F (74°C) and cheese is melted.
  6. Remove skillet from heat and drizzle sweet balsamic glaze over each chicken breast. Sprinkle crushed red pepper flakes if desired.
  7. Transfer chicken to plates, garnish with extra basil if desired, and serve immediately.

Notes

Pounding chicken to even thickness ensures even cooking and juiciness. Stir balsamic glaze regularly to prevent burning. Use fresh mozzarella for best melt and creaminess. Let chicken rest a couple of minutes before serving to lock in juices. If glaze thickens too much, stir in a splash of water to loosen it.
