A quick and easy recipe for crispy roasted chickpeas seasoned with a smoky, earthy, and spicy blend of spices. Perfect as a snack, salad topping, or party treat.

  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • Freshly ground black pepper, a pinch (optional)

Instructions

  1. Preheat your oven to 400Β°F (200Β°C).
  2. Drain and rinse the chickpeas in a colander under cold water.
  3. Dry the chickpeas thoroughly by spreading them on a clean kitchen towel or layers of paper towels. Pat and roll gently to remove as much moisture as possible.
  4. Transfer chickpeas to a mixing bowl. Add the olive oil and toss until every chickpea is lightly coated.
  5. Sprinkle the spices evenly over the chickpeas: smoked paprika, cumin, cayenne, garlic powder, onion powder, salt, and pepper. Toss well to coat all the chickpeas.
  6. Spread chickpeas in a single layer on a baking sheet lined with parchment paper or a silicone mat, leaving space between them.
  7. Roast in the oven for 25 to 30 minutes, shaking the pan or stirring every 10 minutes to promote even browning.
  8. Watch closely during the last 5 minutes to avoid burning. Chickpeas should be golden brown and crispy.
  9. Remove from oven and let cool on the baking sheet for at least 10 minutes to crisp up further.

Notes

Dry chickpeas thoroughly before roasting to ensure crispiness. Shake or stir chickpeas every 10 minutes during roasting for even browning. Let chickpeas cool completely on the baking sheet to crisp up further. For an air fryer, roast at 390Β°F (200Β°C) for about 15 minutes, shaking halfway through. Store leftovers in an airtight container at room temperature and re-crisp in a 350Β°F oven for 5-7 minutes if needed.
