Instructions

  1. In a large mixing bowl, combine 1 cup sifted all-purpose flour, 2 tablespoons cornstarch, and ½ teaspoon salt.
  2. Gradually whisk in ½ cup cold water until a smooth, slightly thick batter forms without lumps. Adjust water or flour as needed to achieve a batter that coats the back of a spoon but drips slowly.
  3. In a separate bowl, mix 4 oz softened cream cheese with ¼ cup grated Parmesan, 2 tablespoons finely chopped fresh chives, 1 minced garlic clove, and ¼ teaspoon freshly ground black pepper until well combined. Fold in cooked bacon bits if using. Taste and adjust seasoning.
  4. Pour vegetable oil into a frying pan to about 1 inch deep and heat over medium-high until it reaches 350°F (175°C). Test by dropping a small amount of batter into the oil; it should sizzle immediately.
