Instructions

  1. Toast and candy the walnuts: Heat a small saucepan over medium heat. Add walnut halves, sugar, and water. Stir frequently for about 5 minutes until sugar dissolves and coats walnuts in a glossy caramelized shell. Transfer to parchment paper and let cool completely.
  2. Prepare the shrimp: Pat dry shrimp with paper towels. Season with salt and pepper. Whisk egg in a bowl. Place cornstarch in another bowl. Dip each shrimp in egg, then coat thoroughly with cornstarch. Set aside.
  3. Heat the oil: Pour vegetable oil into a deep frying pan or wok to about 2 inches deep. Heat to 350°F (175°C). Test oil readiness by dropping a small amount of batter; it should bubble and rise to the surface.
  4. Fry the shrimp: Fry shrimp in batches to avoid overcrowding. Fry for 2-3 minutes or until golden and crispy. Use a slotted spoon to transfer shrimp to a cooling rack or paper towels to drain. Repeat until all shrimp are cooked.
  5. Make the sweet glaze: Whisk together honey, mayonnaise, sweetened condensed milk, and lemon juice until smooth and well combined.
  6. Toss and serve: Place fried shrimp in a large bowl, pour glaze over them, and gently toss to coat evenly. Add candied walnuts and toss lightly again. Garnish with chopped green onions or sesame seeds if desired. Serve immediately.
