These crispy garlic knots feature a golden, crispy crust with a soft, fluffy inside, brushed with a luscious herb butter blend of fresh parsley, thyme, and oregano. Perfect for any occasion, they are quick, easy, and a crowd-pleaser.

  • 3 ½ cups (440g) all-purpose flour, sifted
  • 2 ¼ tsp active dry yeast (one packet)
  • 1 cup (240ml) warm water (around 110°F / 43°C)
  • 1 tbsp (12g) granulated sugar
  • 1 ½ tsp (9g) salt
  • 2 tbsp (30ml) olive oil
  • ½ cup (115g) unsalted butter, softened
  • 4 cloves fresh garlic, finely minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh oregano, chopped (or ½ tsp dried)
  • ¼ tsp salt (for herb butter)
  • ⅛ tsp freshly ground black pepper (optional)
  • 1 tbsp (15ml) olive oil (for brushing)
  • Pinch of coarse sea salt (optional for finishing)

Instructions

  1. Activate the yeast by combining warm water (110°F/43°C), sugar, and yeast in a small bowl. Stir gently and let sit until frothy and bubbly, about 5-10 minutes.
  2. In a large bowl, whisk together flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until it starts coming together.
  3. Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with dough hook on medium speed for 6-7 minutes.
  4. Place dough in a lightly oiled bowl, cover with a kitchen towel or plastic wrap, and let rise in a warm spot until doubled in size, about 1 to 1 ½ hours.
  5. While dough rises, mix softened butter, minced garlic, chopped herbs, salt, and pepper in a small bowl. Set aside at room temperature.
  6. Punch down the dough and divide into 12 equal pieces (about 2 oz / 55g each). Roll each piece into a 10-inch (25cm) rope and tie into a knot. Place knots on a parchment-lined baking sheet, spaced apart.
  7. Cover the shaped knots loosely and let rise for 30 minutes.
  8. Preheat oven to 400°F (200°C). Brush knots lightly with olive oil and bake for 15-18 minutes until golden brown and crispy on the edges.
  9. Immediately brush baked knots generously with the prepared herb butter.
  10. Optionally, sprinkle with coarse sea salt or extra chopped parsley before serving.

Notes

Use gluten-free flour blend for gluten-free option; swap unsalted butter with dairy-free spread for lactose intolerance. For extra crispy crust, brush olive oil before baking and use a pizza stone. Avoid overcrowding baking sheet. If knots feel dense, add a splash more water or knead longer. Fresh garlic is preferred over garlic powder for best flavor.
