A quick and irresistible snack featuring smoky little smokies wrapped in crispy bacon with a touch of brown sugar and black pepper for a sweet-spicy kick. Perfect for parties, game nights, or casual get-togethers.

  • 24 little smokies sausages (14 oz / 400 g)
  • 12 slices thin-cut bacon (regular or turkey bacon)
  • 2 tablespoons brown sugar
  • ½ teaspoon freshly ground black pepper
  • Pinch of cayenne pepper (optional)
  • Toothpicks for securing bacon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut each slice of bacon in half crosswise to create strips long enough to wrap one little smokie.
  3. In a mixing bowl, combine brown sugar, black pepper, and cayenne pepper (if using). Toss the little smokies gently in this mixture until evenly coated.
  4. Wrap each coated little smokie tightly with a half slice of bacon and secure with a toothpick.
  5. Arrange the wrapped little smokies seam side down on a baking sheet lined with parchment paper or foil. Optionally, place on a wire rack on the baking sheet for extra crispiness.
  6. Bake for 20-25 minutes, turning once halfway through, until bacon is golden and crisp. Watch closely from 18 minutes onward to avoid burning.
  7. Remove from oven and let cool for 5 minutes on the tray before serving.

Notes

Use thin-cut bacon for best crispiness. Do not overcrowd the pan to avoid soggy bacon. Tossing little smokies in brown sugar and pepper before wrapping adds a caramelized crust. Rest the cooked smokies for 5 minutes before serving to keep bacon from sliding off. Wooden toothpicks soaked in water prevent burning if broiling. Can be baked in an air fryer at 400°F for 10-12 minutes, turning halfway.
