  • 1 tablespoon olive oil
  • 1 onion, diced finely
  • 2 garlic cloves, minced
  • 8 ounces wild mushrooms (e.g., cremini, shiitake, oyster), cleaned and sliced
  • 23 fresh thyme sprigs
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons flour
  • Salt and pepper to taste

Instructions

  1. Clean the mushrooms by gently wiping off any dirt with a damp paper towel.
  2. Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.
  3. Add the diced onion and sautΓ© for about 5 minutes until translucent and fragrant. Stir in the minced garlic and cook for another minute.
  4. Add the cleaned and sliced mushrooms to the pot. Cook for 8-10 minutes, stirring occasionally, until they release their liquid and start to brown.
  5. Sprinkle the flour evenly over the mushrooms, stirring constantly to create a roux. Cook for 1-2 minutes until the flour is absorbed.
  6. Pour in the vegetable broth while stirring to avoid lumps. Add the fresh thyme sprigs and bring the mixture to a gentle simmer.
  7. Simmer the soup for 15 minutes, allowing the flavors to meld together.
  8. Remove the thyme sprigs and blend the soup using an immersion blender until smooth. Alternatively, transfer the soup in batches to a blender and blend until creamy.
  9. Stir in the heavy cream, season with salt and pepper to taste, and heat through for another 2-3 minutes.
  10. Serve hot with a garnish of fresh parsley or a drizzle of olive oil.

Notes

For a lighter version, substitute heavy cream with milk or a dairy-free alternative. Add a splash of white wine for extra flavor. If the soup is too thick, add more broth or water; if too thin, simmer uncovered to reduce.
