  • 1 pint (300 grams) cherry tomatoes
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh herbs (thyme and basil, chopped)
  • 1 small garlic clove, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • Salt and freshly cracked black pepper to taste
  • Optional: pinch of crushed red pepper flakes

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Rinse and pat dry 1 pint (300 grams) of cherry tomatoes. Place them on the baking sheet and drizzle with 1 tablespoon of olive oil, 1 teaspoon honey, a pinch of salt, and freshly cracked black pepper. Toss gently to coat evenly.
  3. Roast the tomatoes in the preheated oven for about 15-20 minutes, or until they start to wrinkle and burst, releasing their juices. They should smell sweet and slightly caramelized. Keep an eye on them to avoid burning.
  4. Remove the tomatoes from the oven and let them cool slightly while you prepare the feta base.
  5. Place 8 ounces (225 grams) of crumbled feta cheese into a food processor. Add 2 tablespoons of extra virgin olive oil, 1 tablespoon fresh lemon juice, and 1 small minced garlic clove. Process until smooth and creamy, about 1-2 minutes, stopping occasionally to scrape down the sides with a spatula. The texture should be light and fluffy.
  6. Gently stir in 2 tablespoons of freshly chopped herbs (thyme and basil). Adjust salt and pepper to taste. If desired, add a pinch of crushed red pepper flakes for heat.
  7. Transfer the whipped feta dip to a serving bowl. Spoon the roasted cherry tomatoes on top, including their juices for extra flavor. Drizzle with a little more olive oil if desired.
  8. Optional garnish: Add a few whole herb leaves or a sprinkle of lemon zest for a fresh finish.

Notes

If the dip feels too thick, add olive oil a teaspoon at a time to loosen it. Serve at room temperature for best flavor. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat tomatoes separately if desired, but avoid heating the entire dip to prevent separation. For a dairy-free option, substitute feta with plant-based cheese and use coconut yogurt for creaminess.
