  • 4 medium skinless, boneless chicken breasts
  • ½ cup oil-packed sun-dried tomatoes, drained and chopped
  • 3 cloves garlic, minced
  • ¾ cup heavy cream
  • ½ cup chicken broth (gluten-free if needed)
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil, chopped (optional, for garnish)

Instructions

  1. Pat chicken breasts dry and season both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook undisturbed for about 5 minutes until golden brown on the underside. Flip and cook the other side for 4 minutes.
  3. Remove chicken from skillet and cover loosely with foil. Lower heat to medium.
  4. Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook, stirring frequently, until fragrant, about 1-2 minutes.
  5. Pour in chicken broth and scrape up browned bits from the bottom of the pan. Cook for 1 minute.
  6. Stir in heavy cream and Parmesan cheese. Whisk gently until cheese melts and sauce thickens slightly, about 3-4 minutes. Keep heat moderate to avoid curdling.
  7. Return chicken breasts to the skillet, nestling them into the sauce. Spoon sauce over the top. Reduce heat to low and simmer gently for 5-7 minutes until chicken is cooked through and tender.
  8. Taste sauce and adjust seasoning with salt and pepper if needed. Garnish with fresh basil and serve immediately.

Notes

If the sauce becomes too thick, add a splash more chicken broth to reach desired consistency. Avoid pressing or poking the chicken while cooking to keep it juicy. Use freshly grated Parmesan for best sauce texture. For a lighter sauce, substitute half-and-half for heavy cream or Greek yogurt added off heat. For dairy-free, use canned coconut milk and nutritional yeast instead of Parmesan. Leftovers keep well refrigerated for up to 3 days; reheat gently with added broth or cream to restore sauce texture.
