A comforting and indulgent casserole featuring tender chicken, creamy spinach, and gooey melted cheese. Perfect for busy weeknights or cozy family dinners.

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cups fresh spinach, roughly chopped (or frozen spinach, thawed and drained)
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 8 oz cream cheese, softened
  • 23 cloves garlic, minced
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese (optional)
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the chicken breasts into bite-sized pieces. Season with a pinch of salt, pepper, and half of the Italian seasoning.
  3. Heat the olive oil in a large skillet over medium heat. Add the chicken pieces and cook for 5-6 minutes, turning occasionally, until lightly browned but not fully cooked through. Remove the chicken and set aside.
  4. In the same skillet, add the chopped spinach and sauté for 2-3 minutes until wilted. If using frozen spinach, make sure it’s completely thawed and drained before adding it to the skillet. Transfer the cooked spinach to a plate and set aside.
  5. In a medium mixing bowl, combine the heavy cream, softened cream cheese, minced garlic, onion powder, and the remaining Italian seasoning. Whisk until smooth and creamy. Season with salt and pepper to taste.
  6. In the prepared baking dish, spread the cooked chicken evenly across the bottom. Layer the sautéed spinach on top of the chicken.
  7. Pour the creamy spinach sauce over the chicken and spinach, making sure to spread it evenly so every bite is full of flavor.
  8. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese over the top of the casserole.
  9. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden on top.
  10. Remove from the oven and let the casserole rest for 5 minutes before serving.
