Creamy Slow Cooker Queso Dip with Beef

This easy, ultra-creamy queso dip combines savory seasoned beef, smooth processed cheese, tangy tomatoes with green chilies, and cream cheese for a crowd-pleasing appetizer. Perfect for parties, game days, or cozy gatherings, it’s a simple 5-ingredient recipe made in your slow cooker.

  • 1 pound ground beef (80/20 or 85/15)
  • 16 ounces processed cheese (Velveeta, cubed)
  • 8 ounces cream cheese, softened and cut into chunks
  • 1 (10-ounce) can diced tomatoes with green chilies (such as Rotel), undrained
  • 1 packet (about 1 ounce) taco seasoning
  • Optional: Jalapeños (fresh or pickled), chopped cilantro, 1/2 cup black beans (drained and rinsed)

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and break it up with a spoon or spatula.
  2. Sprinkle in taco seasoning and cook, stirring often, until beef is no longer pink and edges are starting to crisp (about 5–7 minutes). Drain excess grease if needed.
  3. Spray the inside of your slow cooker with nonstick spray for easy cleanup.
  4. Add browned beef, processed cheese cubes, cream cheese chunks, and diced tomatoes with green chilies (undrained) to the slow cooker. Stir gently to combine. Add optional jalapeños or black beans if desired.
  5. Cover and cook on LOW for 1–2 hours, stirring every 20–30 minutes, until cheese is melted and dip is smooth and bubbly.
  6. Stir well, taste, and adjust seasoning if needed. Switch slow cooker to ‘Warm’ for serving.
  7. Garnish with chopped cilantro, extra diced tomatoes, or sliced jalapeños if desired. Serve warm with tortilla chips, veggies, or warm flour tortillas.

Notes

For a spicier dip, add jalapeños or use spicy taco seasoning. Stir every 20–30 minutes for best texture. If dip thickens, stir in a splash of milk. Can be made vegetarian by substituting beef with black beans or plant-based ground. Store leftovers in an airtight container in the fridge for up to 4 days; reheat gently with a splash of milk.
