  • 1 cup (240 ml) full-fat sour cream

  • 1 cup (240 ml) salsa, chunky or smooth
  • 1 cup (about 100 g) shredded cheese blend (sharp cheddar and Monterey Jack)
  • 1 medium tomato, diced
  • 2 stalks green onions, thinly sliced
  • 1/4 cup (about 35 g) black olives, sliced (optional)
  • A handful fresh cilantro, chopped
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Open and stir the can of refried beans thoroughly. If too thick, add 1 tablespoon of water and mix until spreadable. Spread evenly in the bottom of a 9×9-inch baking dish. (About 5 minutes)
  2. In a mixing bowl, combine softened cream cheese and sour cream. Use an electric mixer or whisk until silky smooth with no lumps. Stir in ground cumin, chili powder, salt, and pepper. Spread this mixture evenly over the bean layer. (7-10 minutes)
  3. Spoon freshly mashed guacamole over the creamy layer and spread gently. (2-3 minutes)
  4. Spread salsa evenly over the guacamole. Drain excess liquid if salsa is watery. (2 minutes)
  5. Evenly distribute shredded cheese blend over the salsa. (1-2 minutes)
  6. Top with diced tomatoes, sliced green onions, sliced black olives (optional), and chopped cilantro. (5 minutes)
  7. Cover the dish with plastic wrap and refrigerate for at least 1 hour (up to 4 hours) to allow flavors to meld and layers to firm up.
  8. Serve chilled or at room temperature with crunchy tortilla chips or fresh vegetable sticks.

Soften cream cheese to room temperature before mixing for smooth texture. Drain watery salsa to avoid sogginess. Chill dip for at least 1 hour to meld flavors and firm layers.
