  • 1 can (10 ounces) Rotel tomatoes, drained (mild or spicy)
  • 1 pound ground beef or sausage, cooked and crumbled
  • 8 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: Fresh parsley, chopped

Instructions

  1. Boil a large pot of water, add a generous pinch of salt, and cook pasta according to package instructions until al dente (8-10 minutes). Drain and set aside, saving 1 cup of pasta water.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and sautΓ© for 3-4 minutes until softened and fragrant. Add minced garlic and cook for another minute.
  3. Add ground beef or sausage to the skillet. Break it up with a wooden spoon and cook until browned and fully cooked through (7-8 minutes). Season with salt and pepper to taste.
  4. Reduce heat to low and stir in softened cream cheese. Let it melt completely, stirring occasionally.
  5. Pour in chicken broth and heavy cream, stirring until the sauce is creamy and thoroughly mixed. Add reserved pasta water if needed to adjust consistency.
  6. Add drained Rotel tomatoes to the sauce and stir well to evenly distribute.
  7. Sprinkle shredded cheddar cheese into the sauce, stirring until melted and smooth.
  8. Add cooked pasta to the skillet and toss until fully coated with the creamy Rotel sauce.
  9. Serve immediately, garnished with fresh parsley if desired.
