Instructions

  1. Combine crushed graham crackers and melted butter in a small bowl. Mix until crumbs are evenly moistened.
  2. Divide the crust mixture evenly among jars or serving dishes. Press down gently to form a compact base. Set aside.
  3. In a medium mixing bowl, beat softened cream cheese with a hand mixer until smooth and creamy.
  4. Add Greek yogurt, protein powder, honey (or maple syrup), vanilla extract, and lemon juice to the bowl. Mix until fully incorporated and smooth.
  5. Taste the mixture and adjust sweetness if needed by adding more honey or maple syrup.
  6. Spoon cheesecake filling evenly over the prepared crusts in jars, filling them about 2/3 full.
