  • 2 to 3 tablespoons (3045 ml) heavy cream
  • 2 tablespoons (28g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 to 2 teaspoons beet juice or natural pink food coloring
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Melt the butter using a microwave-safe bowl or stovetop and let it cool slightly so it’s warm but not hot (about 1-2 minutes).
  2. Sift the powdered sugar into a mixing bowl to avoid lumps.
  3. Add the warm melted butter to the powdered sugar and whisk gently until the mixture looks thick and sandy.
  4. Slowly pour in the heavy cream, one tablespoon at a time, whisking after each addition until the glaze is creamy and glossy but still pourable.
  5. Mix in the vanilla extract and fresh lemon juice if using.
  6. Add beet juice or natural pink food coloring and whisk until the color is uniform. Add more colorant if a deeper pink is desired, but avoid thinning the glaze.
  7. Check consistency: if too thick, add a splash more cream; if too thin, add more powdered sugar.
  8. Optional: Pass the glaze through a fine mesh sieve for an ultra-smooth finish.
  9. Use immediately by drizzling or spreading over cooled desserts. The glaze sets in about 10-15 minutes at room temperature.
