Instructions

  1. In a large mixing bowl, pour 1 cup (240 ml) cold heavy cream. Using an electric mixer, beat the cream until soft peaks form, about 2-3 minutes. Set aside.
  2. In a separate bowl, whisk together 1/2 cup (60 g) powdered sugar, 2 tablespoons (30 ml) fresh lemon juice, 1 tablespoon (about 1 lemon) lemon zest, and 1 teaspoon (5 ml) vanilla extract. Stir until the sugar is dissolved and the mixture is smooth.
  3. Add 1/2 cup (120 g) plain Greek yogurt to the lemon mixture. Whisk until fully combined, ensuring there are no lumps.
  4. Gently fold the whipped cream into the lemon-yogurt mixture using a rubber spatula. Fold in small batches to keep the mousse light and airy.
  5. Once fully combined, divide the mousse into serving glasses or bowls. Spoon or pipe it in for presentation.
  6. Cover the glasses with plastic wrap and refrigerate for at least 2 hours to allow the mousse to set.
