Instructions

  1. Place each chicken breast between two sheets of plastic wrap or inside a zip-top bag. Using a meat mallet or rolling pin, gently pound to about 1/2 inch thickness. (5 minutes)
  2. Season the flour with salt and pepper on a shallow plate. Lightly coat each chicken breast on both sides, shaking off excess. (3 minutes)
  3. Heat olive oil and butter in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook until golden and cooked through, about 4 minutes per side (internal temp 165°F). Remove and set aside on a warm plate. (10 minutes)
  4. Lower heat to medium and add minced garlic to the same pan. Sauté until fragrant, about 30 seconds to 1 minute. Pour in chicken broth and scrape the browned bits from the pan bottom with a wooden spoon. (2 minutes)
  5. Stir in lemon juice and zest, along with drained capers. Let the mixture simmer gently for 2-3 minutes. (3 minutes)
  6. Lower heat to medium-low and slowly stir in heavy cream. Let it simmer until the sauce thickens slightly, about 3-4 minutes. Taste and adjust salt and pepper. (4 minutes)
  7. Return chicken to pan, nestle into the sauce and spoon sauce over the top. Let warm together for 2 minutes. (2 minutes)

Pound chicken breasts evenly for tender, uniform cooking. Simmer cream gently to avoid curdling. Use fresh lemon juice for best flavor.
