  • 1 teaspoon vanilla extract
  • 1/4 cup Greek yogurt or sour cream
  • Pinch of salt
  • 1/2 teaspoon lemon zest (optional)

  • Mini gingerbread cookies or festive sprinkles (for garnish)
  • Crystallized ginger, chopped (optional, for garnish)

Instructions

  1. Place gingerbread cookies in a zip-top bag and crush with a rolling pin or can until you have small crumbs. Transfer to a bowl, add cinnamon and ginger, and drizzle in molasses. Stir until evenly coated. Set aside.
  2. In a medium bowl, beat softened cream cheese until smooth (about 2 minutes). Add powdered sugar, vanilla extract, Greek yogurt (or sour cream), pinch of salt, and optional lemon zest. Beat again until fluffy and smooth.
  3. In a separate bowl, whip heavy cream until soft peaks form (about 2-3 minutes). Gently fold whipped cream into the cheesecake mixture until fully incorporated.
  4. Layer parfait cups: Spoon about 2 tablespoons of gingerbread crumbs into the bottom of each cup. Add about 1/4 cup of cheesecake filling on top. Repeat with another layer of crumbs and filling, finishing with crumbs.
  5. Top each cup with a swirl of whipped cream, a mini gingerbread cookie, and festive sprinkles or crystallized ginger. Chill parfaits for at least 30 minutes before serving.
