  • 1/4 cup unsalted butter, softened
  • 2 tablespoons pure maple syrup
  • 2 cups powdered sugar, sifted
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  3. In a large mixing bowl, beat butter and brown sugar until light and fluffy (about 3 minutes).
  4. Add molasses, egg, and vanilla extract; beat until smooth.
  5. Gradually add dry ingredients to wet ingredients, mixing on low until just combined. Dough will be soft and slightly sticky.
  6. Scoop tablespoon-sized dough balls, roll in granulated sugar, and place 2 inches apart on baking sheet. Chill dough for 10 minutes if too soft.
  7. Bake for 10-12 minutes, until edges are set and tops are cracked but centers are soft. Do not overbake.
  8. Let cookies cool on baking sheet for 5 minutes, then transfer to cooling rack.
  9. For maple frosting: In a clean bowl, beat cream cheese and butter until fluffy (about 2 minutes). Add maple syrup, powdered sugar, salt, and vanilla; beat until smooth and creamy. Chill if frosting is too loose.
  10. Once cookies are completely cool, spread about 1 tablespoon frosting onto the flat side of one cookie and top with another. Press gently.
  11. Chill assembled sandwiches for 20 minutes before serving for best texture.

Notes

Chill dough if cookies spread too much. Use fresh spices for best flavor. For gluten-free, use a 1:1 flour blend. For dairy-free, substitute plant-based butter and cream cheese. Frosting consistency can be adjusted with more powdered sugar or a splash of milk. Cookies taste even better after a day as flavors meld.
