A comforting and easy-to-make side dish featuring buttery Yukon Gold potatoes blended with sweet roasted garlic, cream, and butter for a silky smooth texture.

  • 2 pounds Yukon Gold potatoes
  • 1 whole head of garlic
  • 4 tablespoons unsalted butter, room temperature
  • 1/2 cup heavy cream, warmed
  • 1/4 cup whole milk, warmed
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: chopped fresh chives or parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Slice off the top 1/4 inch of the garlic head to expose cloves. Drizzle with olive oil, wrap loosely in foil, and roast for 30-35 minutes until golden and soft. When cool, squeeze cloves out and set aside.
  2. Peel Yukon Gold potatoes and cut into roughly 1.5-inch chunks. Place in a large pot and cover with cold water by about 1 inch. Add a pinch of salt.
  3. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 15-20 minutes until potatoes are easily pierced with a fork. Drain well in a colander.
  4. Return potatoes to pot or large bowl. Mash with a potato ricer or masher until smooth, avoiding overworking to prevent gluey texture.
  5. Stir in roasted garlic cloves, softened butter, warmed heavy cream, and milk. Mix gently until creamy and well combined. Season with salt and freshly ground black pepper to taste.
  6. If mash is too thick, add more warm milk or cream to reach desired consistency.
  7. Taste and adjust seasoning. Sprinkle with chopped chives or parsley if desired. Serve hot.

Notes

Warm the cream and milk before adding to keep potatoes fluffy and absorb creaminess better. Avoid over-mashing to prevent gluey texture. Roasting garlic mellows flavor and adds sweetness. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months. Reheat gently with a splash of milk or cream.
